Huevos Rancheros Keto Breakfast

This recipe features eggs (filled with omega-rich fatty acids) and sautéed peppers and onions (high in micronutrients). Topping it off is some melted cheese!

Ingredients:

Eggs (or egg substitute)

Bell Peppers, Onion and Sautéed Onions

Shredded cheese to taste.

Instructions:

Saute peppers and onions in a pan for about five minutes or until cooked through. Crack two eggs into the skillet with the veggies, cooking as you would any other scrambled egg dish on the stovetop. Remove from heat once the desired doneness is achieved, top with cheese of your choice, and serve!

Ingredients:

Cucumbers, sliced thinly (approximately four)

Tomatoes cut in wedges or strips (about two of each)

Half an onion chopped finely and sauteed with olive oil for about five minutes. The other half of the onion can be used as a garnish later.

One avocado peeled and diced into cubes.

Instructions:

Arrange cucumber, tomato on top of a bed of salad greens or spinach leaves if desired)—top vegetables with one spoonful ranch dressing mixture made by combining yogurt base.

Low Carb Keto Energy Balls

Ingredients:

One Tbsp melted butter

Two tablespoons coconut oil

Tahini

Sweetener of your choice

Instructions:

Mix almond flour, coconut oil, and sweetener together. Add tahini to taste! Roll the dough into keto balls about the size of a small walnut or smaller. Place on a cookie sheet covered with parchment paper – the texture will be more crispy than regular cookies, so they do not need much space between them.
