The keto diet is a very high fat, low carb diet that is a great way to lose weight. The keto diet helps with energy levels by providing the body and brain with healthy fats.
The four recipes we will feature today are all made up of ingredients you can find at any grocery store, making it both easy and inexpensive for anyone looking to cut back on carbohydrates.
Huevos Rancheros Keto Breakfast
This recipe features eggs (filled with omega-rich fatty acids) and sautéed peppers and onions (high in micronutrients). Topping it off is some melted cheese!
Eggs (or egg substitute)
Bell Peppers, Onion and Sautéed Onions
Shredded cheese to taste.
Saute peppers and onions in a pan for about five minutes or until cooked through. Crack two eggs into the skillet with the veggies, cooking as you would any other scrambled egg dish on the stovetop. Remove from heat once the desired doneness is achieved, top with cheese of your choice, and serve!
Ranch Dressing Keto Salad Topper
This recipe includes all of our favorite keto-friendly foods, including ranch dressing made without sugar added yogurt, avocados high in healthy fat content, among many other things like potassium. This salad makes a great filling lunch.
Cucumbers, sliced thinly (approximately four)
Tomatoes cut in wedges or strips (about two of each)
Half an onion chopped finely and sauteed with olive oil for about five minutes. The other half of the onion can be used as a garnish later.
One avocado peeled and diced into cubes.
Arrange cucumber, tomato on top of a bed of salad greens or spinach leaves if desired)—top vegetables with one spoonful ranch dressing mixture made by combining yogurt base.
Low Carb Keto Energy Balls
Low carb keto energy balls are great for an energy boost on the go. These are great for sticking in your purse, backpack, or desk drawer when you need a treat with less sugar and carbs than other snacks (and they taste delicious!).
One Tbsp melted butter
Two tablespoons coconut oil
Sweetener of your choice
Mix almond flour, coconut oil, and sweetener together. Add tahini to taste! Roll the dough into keto balls about the size of a small walnut or smaller. Place on a cookie sheet covered with parchment paper – the texture will be more crispy than regular cookies, so they do not need much space between them.
A keto smoothie is a fantastic option for a quick breakfast or post-workout meal.
Strawberry Basil Smoothie
Mix the coconut milk, heavy whipping cream, fresh strawberries, basil leaves, and honey to taste. Blend until smooth!
Fruit Frenzy Smoothie
In the blender, add banana (or your favorite fruit), coconut water (I use about 500ml per serving of fruit), ice cubes, and vanilla extract (optional). Add more liquid if needed, so it blends smoothly. Then mix at high speed until all ingredients are well combined.
Minty Matcha Tea Latte
Matcha powder in your choice of flavor with hot water, then top off with almond milk or any other dairy-free milk.
